Breakfast & The Alchemist


Hey Mommies!

We all start our mornings off differently. Some of us hit the snooze button way too may times (guilty), there are those of us that make meditation and prayer a priority (I know I do), others peruse social media or read, some hit the gym (I envy you), but most of us are wrangling the kids, packing their lunches, or making them breakfast (my son wakes up hungry). And If you’re lucky enough, you’ve already established a daily routine that has helped you keep your morning-to-dos in perspective.

I’ve learned that the way in which I start my morning, pretty much

determines how my day will flow. And although it’s not always the case—depending on the time of the month or how late I went to bed the morning of—I try to be very intentional about starting off on a positive, productive, and inspiring note. Feeding my mind, body and soul makes this possible.

My biggest challenge is literally feeding the body. I am not a big breakfast-eater. I hardly ever have an appetite. But I know, that it’s the most important meal of the day. It provides me with energy and nutrients and helps me to maintain a healthy body weight. I found that light breakfast options and small portions, work best for me. So today, after feeding my growing tween, I scrambled myself an egg white in coconut oil and added baby kale, spinach and chard and coupled it with a small bowl of blueberries and strawberries. I poured my leftover green juice concoction into a wine glass, imagining it to be more of a morning cocktail than a healthy drink.

I nibbled on my goodies while reading The Alchemist; an Oprah-approved, fable about following your dreams; filled with inspirational mantras and life lessons. As I flipped pages excitedly, It proved to be just that. My highlighter certainly came in handy…

Fortunately, with all the stress that comes with the Holiday season; gift shopping, post office runs, cooking, cleaning, and hosting family and friends, mentally, I’m already off to a great start! It’s Christmas Eve and I can’t believe I will actually have some time to relax a bit before prepping my Christmas dinner—this SiNgLe MoMmY was smart enough to get all of her grocery shopping done early this year.
